FIERRO, the restaurant led by chefs Carito Lourenço and Germán Carrizo, marked its 10th anniversary this past weekend with a series of events that brought together gastronomy, culture, and emotion across different venues in Valencia.
Over three days, national and international journalists, institutions, collaborators, and close friends joined the celebrations, which paid tribute to a decade of creativity and hospitality.
10 YEARS OF FIERRO
On Sunday, September 14, FIERRO unveiled its brand-new commemorative 10 Years Menu, available to the public from September 18. The menu captures the essence of Carito and Germán’s culinary journey: respect for ingredients, the memory of flavors, and a commitment to constant innovation.
The chefs presented a gastronomic journey with nods to their roots and their evolution in Valencia. “Ten years ago, in the heart of Valencia, FIERRO was born—a space where cuisine became a language of emotions, memory, and territory. FIERRO has been a crucible where the Mediterranean Argentinian spirit took shape, merging roots and reinventing traditions. Ten years of cooking connections and telling stories,” they shared.
A Cocktail in the Heart of Valencia
The celebration continued at Hotel INNSiDE by Meliá Valencia Oceanic, located next to the Oceanogràfic and known for its strong cultural and artistic commitment to Valencia. Guests enjoyed a cocktail featuring some of the most iconic bites from the group’s different restaurants: Doña Petrona, Maipi, La Oficina, and La Central de Postres.

Supported by partners such as Estrella Galicia, Ramón Bilbao, Itac Profesional, Visit Valencia, and Hotel INNSiDE by Meliá Valencia Oceanic, the evening reflected the diversity and authenticity of Carito and Germán’s work. Friends, journalists, podcasters, and influencers from the Valencian gastronomic scene joined in a night filled with toasts, laughter, and heartfelt moments.
La Albufera: Tradition, Emotion and Future
On Monday, September 15, the most emotional chapter of the anniversary unfolded at La Albufera de Valencia. The day began with a talk by Santos Ruiz, Director of the D.O. Arroz de Valencia, who emphasized the cultural and symbolic importance of rice for the region:
“For Valencians, rice is much more than an economic activity—it is a symbol of identity, a cultural reference, a true flag of who we are.”
Guests then enjoyed a boat ride to a traditional barraca, where Carito and Germán shared an intimate and heartfelt message:

“We want to thank you all for being here. Each of you has been part of our story—not just FIERRO’s story, but our personal journey. You are family.”
The event was attended by Paula Llobet, Valencia City Councillor for Culture and Innovation, and Tono Franco, Director of Visit Valencia, alongside industry professionals. Llobet praised the chefs:
“It is an honor for the city that you chose Valencia to grow and build your story here. Beyond professional success, I must recall Carito’s solidarity after the DANA storm—she was the first to call me, offering help. That same evening, she had already prepared 300 sandwiches to deliver to the affected towns. This is the kind of dedication that truly matters.”
The day concluded with a paella cooked by Vicente Rioja from Restaurante Rioja in Benissanó, author of The Great (Secret) Book of Paella, honoring the land’s traditions and closing the celebration on a note of respect and authenticity.

The new tasting menus celebrating Fierro’s decade will be available from September 18, both with vegetarian options:
- 10 YEARS OF FIERRO – An exclusive menu revisiting the restaurant’s most emblematic dishes from the past decade, reinterpreted with fresh vision. A tribute to identity and legacy. Price: €195 (beverages not included).
- THE YEARS – A more intimate journey through the dishes that have marked Carito and Germán’s evolution, offering a distilled and essential perspective.
