Saiti Restaurant

Some restaurants explain their surroundings. Saiti is one of them. Located in Valencia’s Eixample district, on Reina Doña Germana street, Vicente Patiño’s restaurant has been an essential reference of Valencian gastronomy for more than a decade.

Patiño’s story begins before Patiño himself: he grew up among the stoves of his family’s restaurant in Xàtiva, trained in gastronomy and learned from great chefs in his youth. In 2007 the industry named him Revelation Chef at Madrid Fusión, an award that anticipated what is now a well-established reality. He opened Saiti in 2014 (the name is the Iberian name for Xàtiva, his home town) and what began as a small “Valencian bistro” has never stopped growing in depth and recognition.

Its philosophy runs through the whole experience: culture, flavour, tradition, produce, enthusiasm and respect. Through his tasting menus, Patiño proposes a gastronomic journey with a designation of origin. His Mediterranean cooking takes tradition as its starting point and modernity as its tool. He has a soft spot for local produce, fish from the market, vegetables from the huerta, products from the Albufera… He prepares his stocks meticulously, chases flavour, and his menu changes with the seasons.

Saiti holds two Repsol Suns and is recommended by the Michelin Guide and the Macarfi Guide. Saiti stopped being a promise long ago and has become a statement: a true refuge for lovers of Valencian gastronomy and fine traditional cooking.
